Chicken Pasta With Peppers Pasta Skillet
One of my favorite pasta dishes to make at home is chicken pasta in creamy roasted peppers and sundried tomato sauce. It's the perfect blend of flavors and textures! I found a couple of delicious-looking recipes online that inspired me to make my own version. Here's how I did it:
Chicken Pasta in Creamy Roasted Peppers & Sundried Tomato Sauce
Ingredients
- 1 pound chicken breast, sliced
- 1 pound pasta, cooked according to package instructions
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, roasted and diced
- 1 yellow bell pepper, roasted and diced
- 1 cup sundried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup Parmesan cheese
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 tablespoon butter
- Fresh basil, chopped (optional)
- Salt and pepper to taste
Instructions
- Heat the olive oil and butter in a large pan over medium-high heat. Add the chicken and cook until browned on both sides, about 5-6 minutes per side. Remove the chicken from the pan and set it aside.
- Add the onion and garlic to the same pan and sauté until the onion is translucent, about 3-4 minutes.
- Add the roasted peppers and sundried tomatoes and cook for an additional 2-3 minutes.
- Add the heavy cream, Parmesan cheese, chicken broth, salt, and pepper to the pan, stirring until everything is well combined. Bring the sauce to a boil, then reduce the heat to low and let it simmer for 5-7 minutes, until it thickens and coats the back of a spoon.
- Add the cooked pasta to the pan and toss it with the sauce until the pasta is well coated.
- Add the chicken back to the pan and let it cook for an additional 2-3 minutes, until it's heated through.
- Serve the pasta with fresh basil, if desired.
Chicken & Peppers Pasta

- Serve the pasta with fresh basil and Parmesan cheese.
